This distinguished release is a carefully curated selection of five 128L Spanish ex-sweet sherry casks. These American oak barrels, which matured Pedro Ximenez sherry for over a decade, are now the vessels of our premium new-make spirit, imparting an unrivalled depth and intensity of flavour.
 
Tasting Notes:
Aroma: The nose is greeted with a symphony of rich, sweet sherry notes intertwined with hints of malt, dried fruits, caramel, and oak.
Palate: A luscious, full-bodied experience that unveils layers of dark chocolate, figs, and raisins, complemented by a subtle spiciness and a touch of vanilla.
Finish: The finish is long and smooth, leaving a warm, satisfying aftertaste that lingers with whispers of oak and sherry sweetness.
 
Non-chill-filtered and handcrafted with meticulous care, our whisky is made using 100% Australian barley and the pristine water from our onsite spring.
